The Best Taco Soup Fritos Recipe

A bowl of taco soup garnished with Fritos

there’s something magical about taco soup with Fritos. It’s hearty, cheesy, and just a little crunchy—the kind of dish that feels like a warm hug on a cold day.

Ingredients

Scale

For the Soup:

  • 1 lb ground beef (or turkey, if you prefer)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade, if you’re feeling fancy)
  • 1 can (15 oz) diced tomatoes (fire-roasted for extra flavor!)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) tomato sauce
  • 2 cups beef or chicken broth
  • 1 teaspoon chili powder (optional, for extra heat)

For Serving:

  • Fritos corn chips (the star of the show!)
  • Shredded cheddar or Monterey Jack cheese
  • Sour cream
  • Fresh cilantro
  • Diced avocado
  • Lime wedges

Instructions

  • Brown the Meat
Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Toss in the diced onion and garlic, cooking until fragrant (about 2 minutes).
  • Add the Flavor
Sprinkle the taco seasoning over the beef mixture. Stir it in and let it cook for about a minute to bloom the spices.
  • Dump and Simmer
Add the diced tomatoes, beans, corn, tomato sauce, and broth. Stir everything together and bring it to a gentle boil. Once boiling, reduce the heat to low and let it simmer for 20–30 minutes. This is where all the flavors meld together, so don’t rush it!
  • Taste and Adjust
Take a quick taste. Need more spice? Add some chili powder. Too thick? Add a splash more broth. Cooking is all about making it work for you.
  • Serve It Up
Grab your bowls and ladle the soup in. Top with a handful of Fritos, a sprinkle of cheese, a dollop of sour cream, and any other toppings you love. Don’t forget the lime wedge for that bright, tangy finish!

Notes

  • Use Freshly Grated Cheese: Pre-shredded cheese has anti-caking agents that can affect melting. Grating your own is worth the extra effort!
  • Double the Recipe: Taco soup freezes beautifully. Make a big batch, freeze half, and you’ll have dinner ready for another night.
  • Spice It Your Way: For a milder version, skip the chili powder and use mild taco seasoning. Love heat? Add some diced jalapeños or a splash of hot sauce.
