Red velvet cake cookies are such desserts that sound extravagant but are very simple to make. Whether for a special occasion or just to bake on an off day, these cookies will pleasure everyone.

For the Cookies:

    • 1/2 cup unsalted butter (softened)

    • 3/4 cup granulated sugar

    • 1/4 cup brown sugar (for that soft chewiness)

    • 1 tsp vanilla extract

    • 1 1/2 cups all-purpose flour

    • 1 large egg

    • 2 tbsp cocoa powder (unsweetened)

    • 1 tsp baking soda

    • 1/4 tsp salt

    • 1 tsp vinegar (white or apple cider)

    • 1 tablespoon of red food coloring (gel works best for vibrant color)

Optional Add-Ins:

  • Cream cheese chunks: For little pockets of tangy goodness
  • White chocolate chips: Adds a sweet, creamy bite.

Instructions

1. Prep Your Ingredients

First, set your oven to preheat at 350°F , line the baking sheets with parchment paper. You don’t want cookies sticking to your pan—it’s heartbreaking.

2. Beat together the butter and sugars.

Cream the brown sugar, butter, and granulated sugar together in a bowl.until the mixture is smooth and fluffy. This step is key to getting soft cookies, so be patient.

3. Add Wet Ingredients

The egg, the vanilla extract, vinegar, and red food coloring will be added and join together with wet ingredient mix. Don’t panic if the dough looks like something from a science experiment-it all comes together, I promise.

4. Combine Dry Ingredients

In another bowl, sift the baking soda, flour, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

5. Fold in Goodies

If you’re using white chocolate chips or cream cheese chunks, gently fold them in now.

6. Scoop and Bake

Form tablespoon-sized balls of dough and space them about 3 inches apart on baking sheet. Bake for 9–11 minutes, or until the edges are firm and the centers appear slightly soft. Don’t worry, they’ll firm up as they cool.

7. Cool and Enjoy

Allow the cookies to cool on the baking tray for about 5 to 10 minutes before transferring them to a cooling rack to cool down completely. Or, if you’re feeling impatient, enjoy one while it’s still warm. I won’t judge.

Notes

    • Go crazy with toppings: Drizzle with melted chocolate, sprinkle with powdered sugar, or sandwich two cookies with cream cheese frosting.

    • Use gel food coloring: It gives you that vibrant red without thinning out the dough.

    • Don’t overmix: Once you add the dry ingredients, stir just until combined. Be careful to not overmix, as it can result in tougher cookies.

    • Chill the dough (if needed): If the dough is too sticky, pop it in the fridge for 15–20 minutes.
