Plant-based banana bread is a delicious, wholesome alternative to traditional banana bread, made entirely with vegan ingredients.

    • 1 teaspoon vanilla extract

Instructions

Step 1: Preparing the Ingredients

    1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.

    1. Mash the bananas in a large mixing bowl until smooth. The riper the bananas, the better the sweetness and moisture in your plant-based banana bread.

    1. In a small bowl, prepare the flax egg by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water. Let it sit for 5 minutes until thickened.

Step 2: Mixing the Banana Bread Batter

    1. Add the maple syrup (or coconut sugar), melted coconut oil, plant-based milk, flax egg, and vanilla extract to the mashed bananas. Stir well to combine.

    1. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

    1. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix—overmixing can make the plant-based banana bread dense instead of fluffy.

    1. If using nuts, chocolate chips, or shredded coconut, fold them into the batter for extra flavor and texture.

Step 3: Baking the Plant-Based Banana Bread

    1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
