Homemade Nutter Butter Cookies

Nutter Butter Cookies: one of the most beloved snacks ever to have been made. If you haven’t tried these minuscule peanut butter delights before, you are missing out.

For the cookies:

  • 1 cup peanut butter (creamy works best)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt

For the filling:

  • 1/2 cup peanut butter
  • 1 cup powdered sugar
  • 3 tablespoons unsalted butter, softened
  • 12 tablespoons milk (for consistency)

Instructions

1.Prepare the oven: Preheat to 350°F and line your baking sheets with parchment paper.

2.Make the dough: In a bowl, cream together the peanut butter, butter, and sugars. Add the egg and vanilla, then slowly mix in the dry ingredients until a dough forms.

3.Shape the cookies: Roll the dough into small oval shapes (you want that peanut look!) and use a fork to make the classic crisscross pattern.

 

 

4.Bake: Bake for 8–10 minutes or until the edges are golden brown. Let them cool completely.

5.Prepare the filling: Combine all ingredients together smooth. Beat to blend peanut butter, powdered sugar, butter, and milk.

6.Assemble: Simply spread the filling on one cookie and top it off with the other cookie. Voila!
