Who doesn’t love a good Cottage Cheese Flatbread? Whether it’s used as a pizza base, a snack to dip into your favorite spread, or just a simple side for dinner, flatbread has a way of fitting into any meal like it was meant to be there all along.

  • 1 cup cottage cheese: Small curd works best for a smoother dough, but if all you have is large curd, it’s no big deal.
  • 1 1/2 cups all-purpose flour: You can sub half of this with whole wheat flour for a nuttier flavor, but stick with all-purpose for the softest result.
  • 1/2 teaspoon baking powder: This gives the bread a little lift.
  • 1/2 teaspoon salt: Adjust to taste if you’re using salted cottage cheese.
  • 2 tablespoons olive oil: Adds richness and helps the flatbread cook to a golden perfection.
  • Optional seasonings: You could also use garlic powder, onion powder, dried herbs or even a little chili flakes if you’re in the mood to experiment.

Instructions

1: Mix the Ingredients
First, take a big bowl and sieve the cottage cheese, flour, baking powder, and salt. Mix it with a spoon or by hand to form a shaggy dough because at first it appears messy but it will come together.

2: Knead the Dough
Place the batter on a floured surface and knead it for two to three minutes. You want a smooth, slightly sticky dough. If it’s too sticky to work with, sprinkle on a bit more flour, about a tablespoon at a time.

 

 

3: Let It Rest

Surely, this is a very important step – but one that is easily tempting to skip. Rest the dough for approximately 15 minutes. Helps to relax gluten. Easy roll afterwards. For 10 to 15 minutes of resting dough, The oven should be preheated to 375 degrees Fahrenheit or the equivalent of 190 degrees Celsius.

4. Forming the Dough

 

Once the dough has proofed, it is to be divided into 2-3 portions depending on how big you want your flatbreads to be. Next, roll each piece into a rectangle or oval, again with an aim to very thin, even layer. And perfection is not a necessity-homespun edges give it that true homemade quality!

5. Transfer to Baking Sheet
Place the rolled-out dough on a parchment-lined baking sheet. Brush the top with a little olive oil and sprinkle with herbs (like oregano or thyme) and a generous amount of cheese, if desired.

6. Bake the Dough
Preheat the oven to 375°F (190°C) and bake the flatbreads for about 20–25 minutes, or until golden and crispy at the edges. Keep an eye on them as oven times can vary.

7. Check for Doneness
Once the top is golden and the cheese is bubbly and slightly browned, remove the flatbreads from the oven. Let them cool slightly before slicing. tips, your flatbread will turn out soft, golden, and delicious!
