Cosmic Brownies are a classic Little Debbie treat—dense, fudgy brownies with a thick layer of chocolate ganache on top, plus rainbow candy-coated chips (which, honestly, might be the best part).

For the Brownies:

  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar (adds extra chewiness!)
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder (Dutch-processed for that deep chocolatey vibe)
  • ½ teaspoon salt

For the Ganache:

  • 1 cup heavy cream
  • 2 cups semisweet chocolate chips
  • 1 tablespoon butter (for that glossy finish)

For the Topping:

  • Rainbow candy-coated chocolate chips (or mini M&Ms if you’re improvising)

Instructions

  1. Preheat & Prep: Heat your oven to 350°F. Line a 9×13-inch baking dish with parchment paper (trust me, this makes your life easier).
  2. Mix the Batter: In a mixing bowl, mix the brown sugar, melted butter and granulated sugar on high until light. Add eggs one at a time, whisking well after each. Stir in the vanilla.
  3. Add Dry Ingredients: Sift in the flour, cocoa powder, and salt. Gently fold everything together—don’t overmix, or your brownies won’t have that signature chew.
  4. Bake to Perfection: Pour the preparation into prepared pan and smooth it out with the back of the spatula. Bake for about 25 to 30 minutes or until a toothpick inserted into the center of the cake enters out with just a few crumbs.
  5. Make the Ganache: Pour the mixture over the butter and chocolate chips for a maximum of one minute, promptly stirring until it is smooth and glossy.
  6. Assemble the Magic: Pour the ganache over the brownies and spread it evenly. While it’s still soft, sprinkle those rainbow chips all over.
  7. Chill & Slice: Let the brownies cool at room temp for about 30 minutes, then pop them in the fridge for at least an hour. This helps the ganache set so you get those clean, perfect slices.
