Cosmic Brownie Cheesecake: The Ultimate Dessert Mashup

Cosmic Brownie Cheesecake. It is rich, fudgy, and so full of nostalgia that if you were raised on Little Debbie Cosmic Brownies, you already feel the vibe.

Ingredients

For the Brownie Base:

    • 1/2 cup unsalted butter, melted

    • 1 cup granulated sugar

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/3 cup unsweetened cocoa powder

    • 1/2 cup all-purpose flour

    • 1/4 tsp salt

For the Cheesecake Filling:

    • 16 oz cream cheese, softened

    • 1 cup granulated sugar

    • 1/4 cup unsweetened cocoa powder

    • 2 large eggs

    • 1 tsp vanilla extract

    • 1/2 cup sour cream

    • 1/2 cup heavy cream

    • 4 oz melted semi-sweet chocolate

For the Chocolate Ganache:

    • 1/2 cup heavy cream

    • 4 oz semi-sweet chocolate, chopped

For That Cosmic Brownie Magic:

    • 1/4 cup mini rainbow candy-coated chips (or rainbow sprinkles)

Instructions

Make the Brownie Base

  1. Preheat the oven to 325 degrees Fahrenheit. Grease a 9-inch springform pan, lining the bottom with parchment paper.
  2. Take a bowl. Put in your melted butter and your sugar. Beat in your eggs and vanilla till the mixture is smooth.
  3. Stir in cocoa powder, flour, and salt. Mix until combined (don’t overmix).
  4. Pour into the pan, spread evenly, and bake for 15-18 minutes. It should be slightly underbaked—trust me, it’ll finish in the oven later.

Make the Cheesecake Batter

  1. In a large bowl, beat cream cheese and sugar until smooth.
  2. Add cocoa powder, eggs (one at a time), vanilla, sour cream, and heavy cream. Mix until combined.
  3. Pour in melted chocolate and stir until the batter is silky smooth.
  4. Pour over the brownie base and smooth the top.

Bake It Right

  1. In aluminum foil wrap the outside of the springform pan (to prevent leaks).
  2. Place the cheesecake in a water bath—put the pan inside a larger baking dish and pour in hot water (about halfway up the sides).
  3. Bake at 325°F for 50-60 minutes. The edges should be set, but the center will be a little jiggly.
  4. Turn off the oven, crack the door open, and let it sit for 1 hour. This keeps it from cracking.
  5. Chill in the fridge for at least 4 hours (overnight is best).

Add the Ganache & Cosmic Vibes

  1. Heat heavy cream until steaming (but not boiling). Now the chopped chocolate is poured over it in order to be stirred until it is properly combined.
  2. Pour over the cheesecake, smoothing it out.
  3. Sprinkle those classic rainbow candy chips on top for that true Cosmic Brownie look.

Notes

Room temp ingredients – Cold cream cheese = lumpy batter. Let everything sit out for 30 minutes before mixing.

Don’t overmix – Too much air in the batter can make it crack. Just mix until combined.

Water bath matters – Yes, it’s annoying, but it keeps the cheesecake creamy and crack-free.

Patience is key – Cheesecake tastes better the next day. Let it chill overnight if you can.
