Cheesy Rice Recipe: Comfort in Every Bite

A bowl of creamy, cheesy rice with a silver spoon, served on a wooden board with a blue napkin.

Whether you’re looking for a cozy side dish or a main meal to satisfy your carb cravings, cheesy rice is the answer. It’s simple to make, totally customizable, and pairs perfectly with just about anything.

Ingredients

  • Rice (1 cup): White rice works best, but brown or basmati rice will do if that’s what you have.
  • Chicken broth (2 cups): Adds a deeper flavor, but water works too.
  • Butter (2 tbsp): For that rich, creamy base.
  • Shredded cheese (1.5 cups): Cheddar is classic, but you can mix in mozzarella, Parmesan, or even pepper jack.
  • Milk (½ cup): Helps create that silky texture.
  • Garlic powder (1 tsp): Adds a subtle kick.
  • Salt and pepper: To taste.

Optional add-ins:

  • Diced veggies like broccoli or bell peppers.
  • Cooked chicken, ham, or crumbled bacon for a protein boost.
  • Fresh herbs like parsley for a pop of color.

Instructions

1. Cook the Rice

Start by rinsing your rice under cold water to remove excess starch. This keeps the grains from getting too sticky. Then, cook it in chicken broth (or water) according to package instructions. Once it’s done, fluff it with a fork and set it aside.

2. Make the Cheese Sauce

In a medium saucepan, melt the butter over medium heat. Stir in the garlic powder, salt, and pepper. Slowly pour in the milk, whisking constantly to avoid lumps. Once the milk is heated (but not boiling), add your shredded cheese in batches, stirring until it melts into a smooth sauce.

3. Combine Everything

Pour the cheese sauce over the cooked rice and stir until every grain is coated in cheesy goodness. If you’re adding veggies or protein, toss them in now and mix well.

4. Serve and Enjoy!

Spoon the cheesy rice into bowls or onto plates and garnish with extra cheese or fresh herbs if you’re feeling fancy.

Notes

  • Pick the right rice: Long-grain rice like basmati gives a fluffier texture, while short-grain varieties like arborio make it creamier.
  • Don’t skimp on the cheese: Go bold with sharp cheddar or mix in Parmesan for added depth.
  • Pre-cook your add-ins: If you’re adding veggies or protein, cook them beforehand to avoid excess water.
  • Adjust the consistency: If it feels too thick, add a splash of milk. If it’s too runny, let it sit for a few minutes to thicken up.
